It's where you do all of your tracking, start to finish, inside of an hour. If the track is 13 minutes long, that means you get 4 passes. So you need to make them count. If the song is 6, that's ten passes and so on.
It's very simple, but they are songs. They were built in an hour and then edited over evenings.

And it all happens after midnight. That's when things finally calm down, and it provides an appropriate window. If things aren't cooking after that hour there's no reason to continue past 1.
